I recommend editting the tags via Windows Media Players advanced tag editor, although some tags can be editted within the zune software (not many can). Either that or a preferred music taggin program would do the job just fine.
Just ask if you need suggestions on 3rd party tagging software and i can link you too some recommended ones.

in the new version of the zune software (v2) on the right hand side above the songs' column, you'll see two options thats 'browse' and 'list'. hit 'list' and find the song you want to edit the tags of. right click and then make the changes.
